Instagrammable Recipe Ideas On A Budget

We’ve put together some babe’in recipes to tickle those taste buds, give you a ‘gram worthy meal & save enough dollar to still get those garms to keep you looking fresh AF this season.

 

#1 Spicy Chicken Ramen

What you’ll need:

2 Chicken Breast Fillets

1 Red Onion

1 Broccoli

Rice Noodles

4 tbsp. Soy Sauce

1 tbsp. Minced Ginger

1 tbsp. Minced Lemongrass

2 Garlic Cloves

1 Red Chilli

1 Veggie Stock Cube

1 tbsp. Sesame Seeds

1 tbsp. Sesame Oil

Coriander

600ml of boiling water

 

What to do:

For the chicken: Place the chicken breasts in tin foil with coconut oil and 2 tbsp’s of the soy sauce, wrap up and cook in the oven on 180 for 20 minutes.

For the ramen broth: In a saucepan fry off half of the red onion, garlic cloves and half of the red chili for 2 mins in coconut oil. Add the minced ginger and lemongrass and fry for a further minute.

Stick the kettle on and add the 600ml of boiling water along with the veggie stock cube and simmer on a medium heat for 3 mins. Next up add the broccoli and rice noodles and simmer again for a further 4/5 mins.

Once the chicken is cooked, transfer to a chopping board to slice up. In the meantime pour the soy sauce juices from the chicken into the saucepan for extra flavour! Transfer to a bowl and add the slices of chicken. Garnish with the rest of the red onion, fresh chili, sesame seeds, and coriander.

(Serves 2) approx £4.50 per person.

 

#2 Italian Baked Aubergine

What you’ll need:

2 Aubergines

1 Red Onion

2 Garlic Cloves

1 tin of Cannellini Beans

1 tbsp. Tomato Puree

1 tin of Plum Tomatoes

Fresh Basil (stalks and leaves)

Mozzarella

 

What to do:

Cut the aubergines in half lengthways and bake in an oven in a deep dish for 20 mins on 180 with olive oil and salt and pepper. In the meantime in a saucepan fry off the onion and garlic until soft. Add the plum tomatoes and tomato puree and simmer for a further 5 mins adding salt and pepper for flavour.

Next, add the tin of cannellini beans and chopped basil stalks (adding fresh chili is also an option if you want that spice!) When the aubergines have softened take them out the oven and carefully scrape the middles out leaving a little bit around the edges (so they don’t fall apart). Add these to the saucepan and stir into the yummy mixture and stir for 2 mins.

Next, transfer the aubergines back to the deep dish and spoon the mixture into each shell. The best part! Add the mozzarella slices and bake in the oven for 10 mins and serve with fresh basil leaves on top.

(Serves 2) approx £2.50 per person.

 

#3 Spicy Harissa Potatoes with a Runny Egg

What you’ll need:

New Potatoes

1 Yellow Pepper

2 Garlic Cloves

1 Red Onion

Coriander

Feta

1 tbsp. Harissa Paste

2 Eggs

 

What to do:

Boil the new potatoes in a saucepan for 10 mins until (very) soft drain and roughly chop into thick chunks.

In a deep frying pan add the red onion, garlic, and pepper and fry in coconut oil for 5 mins until soft.

Add the harissa paste, and the potatoes and fry for a further 5 mins adding salt and pepper for flavour. In a separate pan fry the eggs and so they’re still runny (what’s the point otherwise…)

Transfer the spicy potato mixture to a plate or a dish and add the feta, coriander and top with the fried egg.

(Serves 2) approx £3.00 per person.
