Blueberry Pancakes
A Pancake Day classic.
Start your day right with this yummy blueberry pancake recipe for breakfast.
Ingredients:
155g plain flour
1/2 teaspoon salt
1 tablespoon baking powder
1 1/4 teaspoon caster sugar
1 egg
225ml milk
1 knob of melted butter
80g frozen blueberries (thawed)
Method:
#1. Sift the flour, salt, baking powder and sugar into a large bowl.
#2. In a seperate bowl, beat together the egg and milk and gradually stir into the flour mixture.
#3. Mix in the butter and the blueberries and set aside for 1 hour.
#4. Heat a frying pan over medium heat with a drizzle of oil and add a scoop of the mixture and cook till brown on both sides.
#5. Serve with syrup and blueberries for a delicious combo.
Fluffy Pancakes With Maple Bacon Jam & Goats Cheese
If you’re more of a savoury kinda gal, this recipe won’t disappoint.
Serve for a tasty pancake Tuesday brunch or switch it up and enjoy this recipe for your dinner.
Ingredients:
135g plain flour
1 teaspoon baking powder
1.2 teaspoon of salt
2 tablespoons of caster sugar
130ml milk
1 egg
30g butter
120g pancetta lardons
3 tablespoons maple syrup
2 tablespoons onion chutney
125g soft goats cheese
Method:
#1. Mix the flour, baking powder, sugar and salt into a bowl.
#2. Add the milk into a jug along with the egg and melted butter, whisking together till combined.
#3. Add the above to the flour mixture and whisk together into a smooth batter and set aside.
#4. Now, onto the bacon jam. Heat a small drizzle of oil in a large frying pan on medium heat. Add the pancetta and fry until crispy, stirring occasionally. Pour in the maple syrup and onion chutney and bring to boil. Allow it to simmer for around 2-3 minutes and remove from the heat.
#5. Back to the pancakes. Add a knob of butter to a large frying pan over a medium heat. Add a ladle of pancake batter and cook till golden on both sides, then remove the pancake from the pan and onto a plate. Repeat until you’ve used all of your mixture.
#6. Reheat your maple bacon jam on medium heat and break your goats cheese into chunks.
#7. Serve your pancakes stacked on top of each other and add the goats cheese and maple bacon jam on top.
Biscoff Pancakes
This is a must-have recipe for all the biscoff fans.
If you’re craving something sweet, give this recipe a go.
Ingredients:
25g butter
140g Biscoff biscuit spread
200g self-raising flour
1 1/2 tablespoon baking powder
1 tablespoon caster sugar
3 large eggs
175ml milk
1 banana
Method:
#1. Add the butter and 60g of the biscoff spread to a small pan and heat until melted.
#2. Mix together the flour, baking powder, sugar and a pinch of salt into a bowl and make a well in the center. Add the melted butter and biscoff combo along with the eggs and milk and whisk together until smooth.
#3. Heat up a large frying pan over a medium heat and add a knob of butter. Once melted, add a ladle of the pancake batter and cook till golden on both sides, flipping half way through. Work in batches until you’ve used all your mixture and leave to one side.
#4. In a small pan, heat up the remaining biscoff spread and milk until it becomes more like a sauce texture.
#5. Stack a few pancakes on each plate, adding some slices banana to the top and drizzle over the biscoff sauce. For extra taste points, add a handful of toasted pecans to your pancakes.
Vegan Pancakes

These fluffy pancakes will make the perfect breakfast.
Ingredients:
125g self-raising flour
2 tablespoons caster sugar
1 tablespoon baking powder
Pinch of salt
150ml soya milk or oat milk
1/4 teaspoon vanilla extract
4 teaspoons sunflower oil for frying.
Method:
#1. Add the flour, sugar, baking powder and salt into a bowl and mix together. Pour in the milk and vanilla extract and whisk together until smooth.
#2. Grab a large non-stick frying pan and add 2 teaspoons of oil and heat up over a medium heat.
#3. Pour a ladle of the pancake mixture onto the pan and cook until the mixture starts to bubble then flip onto the other side and cook till golden. Repeat this process till you’ve used all your mixture.
#4. Stack your pancakes onto a plate and add any toppings of your choice. We’d recommend adding some vegan cream and mixed berries for an insta-worthy combo.
